Rhine Hall Distillery

The Bixby’s Double cocktail brushed curious palates at my family’s dinner table last weekend, when I introduced them to a bottle of apple brandy soon after the first batch at Rhine Hall distillery. The Double comforts with the flavors of fresh apple cider, bitters, and a garnish of cinnamon shavings served over ice. No surprise at the warm reception from my folks. Given our European roots, the brandy base is often a customary indulgence even in its pure form, but the seasonality of the cocktail really reminds one of the approaching family holidays, for those who tend to forget.

Jenny Solberg, for example, doesn’t need that reminder. Since returning to Chicago just over a year ago, the 25 year-old proprietress of Rhine Hall has been surrounded by her loving family in a collective effort to build – by hand(s) – the beautiful distillery in West Town, which now produces her father’s Austrian brandy recipe and where you’ll often see new cocktails introduced during their Thursday and Saturday hours. It goes without saying, I’ll be a pro at making this cocktail after next week and you still have time to practice. Rhine Hall – 2010 W. Fulton St.
